Kale Potato Salad with Grainy Mustard Dressing

IT IS A WELL-KNOWN fact that I am not a great cook. And yet, I can not stop saving recipes from Pinterest, Instagram and my favourite food blogs. Recipes that I will surely never use, but keep just in case I suddenly figure out what I’m doing in the kitchen. That being said, here is one recipe that I actually tried at the beginning of the week, and it turned out so well, we had it again and again nearly everyday this week. It’s a recipe for Kale Potato Salad with (Lemony) Grainy Mustard Dressing from with food + love and it’s so easy that even that most terrible cook (me) can master it. Plus, it involves massaged kale* and is vegan, gluten-free, comes together in fifteen minutes, and a great twist on the traditional potato salad.

1/4 cup grainy mustard
2 tablespoon olive oil
1/2 teaspoon garlic powder
1/4 teaspoon fine sea salt
