Although it's not a fitness book per se, it does deal with how we change and how to build new habits, like working out. The approach is simple but effective: aim to change one small habit at a time. In our enthusiasm to change, we sometimes look to make massive changes all at once, like getting up earlier, eating healthier, getting to the gym 5 days a week and consuming less alcohol.
